Coconut Chocolate Muffins 2

Coconut and dark chocolate are such a wonderful flavour pairing. What could be better than a sweet and rich coconut cake packed with dark chocolate chips? One topped with crisp toasted coconut!

These cakes are so easy to make and so delicious. Make them today and share them with your family and friends.

Coconut & Chocolate Chip Muffins
makes about 8 medium muffins (or 24 mini muffins plus 2 medium)

1 cup self-raising flour
1 cup fine desiccated coconut
1/2 cup caster (superfine) sugar
1/2 tsp salt
1/2 cup dark chocolate chips
1 cup coconut milk
1 tsp vanilla extract

1/2 cup coconut flakes
1/4 cup dark chocolate chips

Preheat the oven to 180C. Line the muffin trays with paper cases.

Place the first five ingredients into a bowl and mix everything together. Add the coconut cream and vanilla and stir until just combined.

Divide the batter between the cases. Top with coconut flakes and chocolate chips.


Bake until golden brown on top and the cake is cooked through (test with a skewer).
