Mango Brulee
The mangoes this season have been simply stunning! Fruit this good doesn’t need anything done, or added, to it but a few extra touches can make it into a simple but elegant dessert.

For this dish I have sprinkled dark brown sugar over the cut side of a mango cheek and placed it under the grill (broiler) until the sugar has browned and bubbled. The melted sugar forms a thin crust, just like the classic French crème brulee. I have served it with some chilled coconut cream to continue the tropical vibe but whipped cream, ice cream or yoghurt would be just as lovely.

This lovely (and healthy) dessert is the perfect end to a long hot summer’s day!
