Has this summer been hot enough for you? Do you feel like eating an ice-cold popsicle to cool down?
I would offer you one of the mango popsicles that I made but I’ve already eaten them all! But don’t worry, they’re very quick and easy to make. I’ll be making some more popsicles soon and not just because its hot. Mango Popsicles
1/4 cup full fat natural yoghurt
2 tbsp icing sugar (powdered sugar)
pulp from 1 or 2 passionfruit
Blitz together the first three ingredients, using either a blender or immersion blender. Fill popsicle moulds two-thirds of the way with the mango mix. Add a few teaspoons of passionfruit pulp. Top with a little more mango mix to fill completely. Place in the freezer for several hours to firm. Makes about 5 or 6 small quarter cup capacity popsicles.
If only it was that nice here in the States. I’ll save my popsicle until it is above freezing haha

Mango has to be one of my favourite parts about summer, and they look perfect in popsicle form!

It’s cold as anything here but I could still eat a mango popsicle! Looking at the ingredient list I reckon I could even sneak one in for breakfast 🙂
