Serves 2 lovebirds!
1/4 cup mint leaves, plus a few extra for garnish
1 tbsp. white sugar
juice of 1 lime
1/2 cup pomegranate juice
60 mls (4 tbsp.) white rum, such as Bicardi
30 mls (2 tbsp.) triple sec, such as Cointreau
Set two strawberries aside to use as a garnish. To make a heart-shaped strawberry simply cut a V-shape into the top and remove the green stem.
Hull and slice the remaining six strawberries. Place in a jug with the mint leaves, sugar, and lime. Muddle well (if you don’t own a cocktail muddle then maybe improvise by using a sturdy mug to thoroughly squish the fruit). If your Valentine is like mine and has a strong aversion to fruity pulpy bits and seeds then run it through a sieve.
Mix the strained liquid with the pomegranate juice, rum and triple sec. Pour into a glass over ice. Garnish with the reserved strawberries and a mint leaf. Serve and enjoy immediately!
If you feel this drink may be a little strong for you then add a small splash of sparkling mineral water at the end.
