Espresso Cheesecake

I adore coffee. I am hopelessly, rapturously addicted. Fortunately for me it is an addiction that is very socially acceptable which I can indulge from breakfast right through to dessert. When I saw James Martin on the tv making an espresso cheesecake I knew I had to try it.

I adapted the recipe only slightly by adding a Kahlua soaked biscotti base and more flavouring to the filling. Despite this it was a bit bland and quite dense; not much better than eating spoonfuls of cream cheese. This was my first attempt at making a no-bake cheesecake and it fell well short of my expectations. At least I was happy with the photo.

As it turns out this cheesecake was for me one of the highlights of the Australia Day long weekend. We’ve had severe storms, floods and blackouts (the second blackout the most prolonged at about 33 hours). I failed at keeping my two small children entertained in these conditions and to make the whole experience complete I’ve had the distressingly unpleasant task of throwing out the entire contents of my fridge and freezer. But these are trivial hardships really. My family is safe and my home is dry and intact. Not everyone have been this lucky. I have a lot to be grateful for.

  1. It does look very good. I am not a fan of no bake cheesecakes but what would you do differently next time? Maybe light philly cream and maybe mix in ricotta? Or more booze!
