Beaut Date Loaf

This Date Loaf is delicious and so ridiculously easy to make. It’s a lovely sweet and wholesome treat to enjoy for morning or afternoon tea.

I was offered a slice from Lisa, the tuckshop lady at my daughter’s school, when I was there volunteering for the day. I very quickly asked for the recipe! Not only was it delicious but I knew my daughter would like it if I told her where the recipe came from. According to my daughter the school tuckshop has the best food ever!

I made this loaf with my daughter so of course we had to add glaze and then some sprinkles. It really didn’t need it though! It’s deliciously sweet and moist and is perfect as is but if you’re feeling a little indulgent maybe add a smear of butter.

My daughter ate about half a slice which is more than she would have eaten if it were one of my recipes!

Beaut Date Loaf

4 Weet-Bix
1 cup sugar
3 tbsp butter
1 cup chopped dates
1 tsp baking powder
1 cup boiling water
1 egg, beaten
1 cup self-raising flour

Place weet-bix, sugar, butter, dates, baking powder into a bowl and cover with the boiling water. Allow to stand for 15 minutes. Stir to blend, then add egg and flour and mix well. Bake in greased loaf tin for 1 hour at 180C.

Freezes well.

Note: When I made this recipe I substituted the butter and egg for vegetable oil and Orgran’s Egg Replacer as it was the end of the shopping week and I had run out of both. It turned out just fine. I also added some mixed spice and about 3/4 cup walnuts.

  1. Weetbix? What a clever idea! I was thinking it might be like sticky date pudding without the sticky but this is much different. I’m going to try Lisa’s date loaf!
