Iced Irish Coffee from The Dessert Spoon

Today I am sharing with you a deliciously refreshing, and rather alcoholic, drink to celebrate St Patrick’s Day. Based on the traditional Irish Coffee this drink is chilled but also packs an extra punch with the addition of coffee liqueur. There are a few different coffee liqueurs to choose from, with Kahlua and Tia Maria being the most well known, but I opted for Patron XO Café. I have only just discovered Patron XO Café and I can’t get enough of it. It is a tequila based liqueur which is beautifully flavoured with lovely caramel notes, not too sweet and deliciously smooth.

If this drink is a little to strong for your taste feel free to substitute the coffee liqueur with the same amount of chilled espresso coffee.

Iced Irish Coffee

30ml Irish Whiskey (I used Tullamore Dew)
60ml Coffee Liqueur (I used Patron XO Café)
2 scoop vanilla ice cream
whipped cream
cocoa

Place the whiskey, coffee liqueur and ice cream in a blender and blitz until smooth. Pour into a tall glass and garnish with whipped cream and a dusting of cocoa. Enjoy!
