Treat yourself and your special person this Valentine’s Day with The Beautiful Cocktail paired with Orange Almond Truffles! Booze and chocolate are always good together, but are even better with a bit of romance thrown in. Happy Valentine’s Day!
The Beautiful Cocktail
This is my current favourite drink. It is very simple to make and despite being quite alcoholic it goes down very easily.
Serves 2
60ml Cointreau
60ml Cognac
Mix together and serve in martini or coupe glasses.
Boozy Orange & Almond Truffles
makes approx 12
100g almond butter
40g icing sugar
Cointreau
50g (or so) dark chocolate, melted
Mix the almond butter and icing sugar in a bowl until combined. Add Cointreau (the exact amount will depend on how boozy you like your truffles and also the consistency of the almond butter. I added about two tablespoons). Place in the fridge for about 10 minutes to firm up.
I used a silicone mould for these truffles. I melted the dark chocolate and coated the inside of the silicone mould and placed it in the fridge to set. Then I spooned in the filling and covered the top with more melted chocolate.
If you do not have a mould simply roll the filling into balls and roll in melted dark chocolate (use two forks to roll the truffle ball in the chocolate and them place on a wire rack to set).
