Rickon’s Apple Cake

This cake is hearty and reassuring eating. It’s sweet, lightly spiced, deliciously moist and full of apple. A treat for anyone but a special treat for fans of Game of Thrones.

The recipe has been adapted from The Unofficial Game of Thrones Cookbook. I received this cookbook, and A Feast of Fire and Ice, recently as a gift. They’re fun cookbooks with some recipes which would be novel to try but I just know I won’t be able to source exotic ingredients like rattlesnake or swan in suburban Brisbane. There’s still plenty of other fabulous recipes to try though so it will be a nice distraction for me while I wait for Game of Thrones Season 4!

I’ve always loved reading but I am so busy that I find the only books I am reading at the moment are cookbooks and children’s books. I do aim to read George RR Martin’s series of books one day … one day! What books or cookbooks are you reading at the moment?

2 cups flour
1 tbsp baking powder
1 1/2 cups sugar
2 tsps mixed spice
1/2 tsp salt
3 apples, peeled, cored and chopped
3/4 cup walnuts, chopped
3/4 cup vegetable oil
2 tsps vanilla extract
1/2 cup applesauce
1 tbsp cider vinegar

to decorate (optional)
icing sugar
1/4 cup walnuts

Preheat the oven to 190C. Line the base of a 20cm (8 inch) springform tin.
Sift together the dry ingredients in a large bowl. Stir through the apple and walnuts. Add the wet ingredients and gently fold through until combined. The batter is quite thick; spoon it in to the tin and bake for about 60 minutes. Allow to cool in the tin for at least 15 minutes.

When cool, place on a cake plate and decorate with sifted icing sugar and walnuts.

      1. it tasted really good 🙂 but wasn’t fully baked, I am afraid it was my fault as I baked it in a glass form, perhaps that wasn’t very wise…

      2. Oh, that’s too bad! Using a different cake tin or dish may affect the cooking time.

        Whenever I have undercooked a cake (it happens to us all!) I serve just the cooked outer edges of the cake and call it a pudding. With a bit of custard or ice-cream on top no one will care.

  1. I love it! It totally looks like something that would be eaten on the Game of Thrones. Good job veganizing it. Definitely read the books if you get a chance. They are a great companion to the show. In fact, I would be really lost in the show if I had not read the books.

    1. Thank you! I’ve really enjoyed watching the series, even if it is a little challenging to keep up with all of the different characters. Of course the big advantage in not having read the books first is being able to enjoy all the surprises and plot twists, like Ep9, S3!

  2. Its funny you mention it because I am actually reading the Game of Thrones novels at the moment and they really are excellent! Some of the best books I’ve read in awhile. I am dying to get my hands on a copy of the cookbooks as well – this cake looks lovely!
